When simulating the flow of liquid in a vertical sewer pipe, Solidworks shows that the pipe is completely filled with liquid, although in reality a gravity-film is formed and water flows down the pipe wall, and there is no liquid in the center of the pipe. Is it possible to somehow simulate a "real" process. Required for heat transfer analysis of a drain water heat exchanger.

I think the Free Surface option, available since SWX 2018 release, would be the most appropriate thing to consider in your case. It allows you to consider a pair of fluid-gas, air and water. You can combine it with heat transfer, so, with the right boundary conditions, you could simulate what you want.
