I'm running a liquid thermal analysis with 3 inlets and 3 outlets. All 3 inlets merge to form one flow path, with a desired flow rate of 1.5 GPM.

My question is: If I select all three inlet faces and set a flow rate of 1.5 GPM, will each individual inlet have 1.5 GPM, or would they be split up evenly, so each inlet has a flow rate of .5 GPM?

I know when applying heat sources, you can select multiple surfaces and the heat load is dispersed evenly amongst all surfaces. Does it work the same with inlets and flow rates?

For flow rates, it's the same thing as for heat sources, it will be splitted according to the surfaces of each inlet ; the larger the surface area, the greater the flow rate. To be sure, you can test it with a very simple model.

To remember this, you can think of the flow rate you write in the boundary condition as the "total flow rate", so if it's not splitted and applied to each inlet, the total flow rate will be greater than the one you wrote.
